Base Ingredients

  • 2 whole chickens (about 4–4½ lbs each)
  • 4 tbsp unsalted butter (softened (or olive oil))
  • 6 garlic cloves (lightly crushed)
  • 2 lemons (halved)
  • Kosher salt
  • Freshly cracked black pepper
  • 2 tbsp olive oil

Instructions

Method

  • Preheat oven to 425°F (220°C).
  • Pat chickens dry thoroughly — this ensures crisp skin.
  • Season generously inside and out with salt and pepper.
  • Rub butter or olive oil over skin.
  • Stuff cavities with garlic, lemon halves, and seasonal aromatics.
  • Place chickens breast-side up in roasting pan.
  • Roast about 60–75 minutes, or until internal temp reaches 165°F at thickest part.
  • Rest 10–15 minutes before carving.
  • This resting step keeps the meat juicy.

Make-Ahead Notes

  • Chickens can be seasoned up to 24 hours ahead and refrigerated uncovered for crisp skin.
  • Aromatics may be prepped earlier in the day.
  • Roast shortly before serving for best texture.
  • Leftovers repurpose beautifully for salads, soups, or sandwiches.
