- 6 garlic cloves (lightly crushed)
- 2 lemons (halved)
- Kosher salt
- Freshly cracked black pepper
- 2 tbsp olive oil

Instructions
Method
- Preheat oven to 425°F (220°C).
- Pat chickens dry thoroughly — this ensures crisp skin.
- Season generously inside and out with salt and pepper.
- Rub butter or olive oil over skin.
- Stuff cavities with garlic, lemon halves, and seasonal aromatics.
- Place chickens breast-side up in roasting pan.
- Roast about 60–75 minutes, or until internal temp reaches 165°F at thickest part.
- Rest 10–15 minutes before carving.

- Chickens can be seasoned up to 24 hours ahead and refrigerated uncovered for crisp skin.
- Aromatics may be prepped earlier in the day.
- Roast shortly before serving for best texture.
