Seasonal Fruit Tart

Equipment

  • 9–10 inch tart pan
  • Mixing bowls
  • Whisk or hand mixer

Ingredients  

Tart Shell

  • 1 prepared tart shell (9–10 inch OR homemade pâte sucrée)
  • egg wash for shine (optional )

Filling

  • cups pastry cream (mascarpone cream, or lightly sweetened whipped mascarpone)
  • 1-2 tbsp powdered sugar (if adjusting sweetness)
  • ½ tsp vanilla extract (optional)

Fruit Topping

  • 2-3 cups seasonal fruit ((see variations below))

Finishing Touch

  • 2 tbsp warmed apricot jam or honey (optional glaze)
  • Fresh herbs (citrus zest, or edible flowers (optional))

Instructions

Method

  • Bake tart shell according to recipe or package directions; cool completely.
  • Spread pastry cream or mascarpone filling evenly into shell.
  • Arrange fruit decoratively or casually over filling.
  • Warm jam slightly and brush lightly over fruit for shine (optional).
  • Chill briefly before serving for clean slices.
  • Serve slightly chilled or cool room temperature.

Make-Ahead Notes

  • Tart shell may be baked 1 day ahead.
  • Filling can be prepared earlier and refrigerated.
  • Assemble tart up to 4 hours before serving.
  • Add delicate herbs or garnishes just before presentation.
